    2006 – 70% Merlot, 30% Sangiovese

    2007 – 60% Merlot, 35% Sangiovese, 5% Cabernet Sauvignon

    2008 – 83% Merlot, 12% Sangiovese, 5% Cabernet Sauvignon

    2009 – 60% Merlot, 40% Cabernet Sauvignon

    Vinification

    This Super Tuscan I.G.T. is produced using the finest fruits selected from the castle’s recently renewed vineyards (2000/2001). Once harvested, the fruit goes through a rigorously scrutinized and complex journey that lasts about two years.

    Fermentation is carried out in small, temperature-controlled stainless steel tanks for 15 to 17 days. During this time, the cap is punched down three to four times daily and déléstages are performed. The maceration of the skins is protracted for 26 to 28 days. Malolactic fermentation occurs in new and second passage French oak barriques (225 l), where the wine is kept for 16 to 18 months. It is then allowed to mature for a further five to six months in bottle prior to release.
