    Vinification

    During the yearly harvest the best Chianti Classico grapes are selected and hand picked from the castle vineyards. The crop is quickly brought to the cellars a short distance away, where the berries are delicately separated from their stalks and pressed.

    Fermentation is performed for 20 days in carefully monitored small stainless steel tanks. For the first 10 days the caps are punched down four times per day - this is followed by a gradual reduction of repetitions.

    For 15 to 16 months the wines rest in French oak: half is aged in large casks (15Hl to 50Hl), and the rest is placed in small new and second passage barriques (225 l).

    Before release the wine rests in bottle for a minimum of three months.
